Lamb Chops

Lamb chops are cut from the rib, loin and shoulder areas. The rib chops include a rib bone; the loin chops include a chine bone. These are the two best cuts of chops. The lamb is under one year old and the meat is succulent and moist when prepared properly. Lamb chops are a classy addition to any meal and recipes are abundant. The notion has been held in the past by many that lamb chops and lamb in general have a distinct "wild" flavor, but in domestic US, fresh lamb does not have a gamey taste or smell.
